Production Brewery

Production Brewer

Production Brewers are responsible for the entire brewing process, from preparing raw materials through the fermentation process. BrickStone Brewery first opened its doors in 2006 with a 5-barrel brewing system. We’ve outgrown that system and today, in addition to a 10 BBL Newlands brewhouse at the brewpub, we recently built a separate state-of-the-art production facility with canning capabilities. In our production facility, we brew on a four vessel, 50 BBL Siemens controlled Newlands brewhouse and are looking to grow to a capacity of 18,000 barrels. BrickStone brews are currently distributed throughout Illinois with the plan to open multiple new markets in the future. Our portfolio includes a diverse selection of award-winning beers, including 2012 GABF gold medal and 2012 World Beer Cup bronze medal APA and 2013 GABF gold medal Belgo APA. 

BrickStone is searching for passionate and skilled people like you! We are hiring a Full-Time Production Brewer in our production facility in Bourbonnais, Illinois. Responsibilities would include but are not limited to: 

  • Manage all aspects of a brew day including handling raw ingredients, produce batches of wort, transfer wort/beer, handle yeast, and monitor fermentations. 

  • Operate brewhouse with great attention to detail and accuracy from milling, mashing, lautering, and proper gravities. 

  • Harvest, Pitch, and Count Yeast and all other aspects of Yeast Management

  • Tank Management including gravity checks and dry-hopping

  • Follow standardized process to ensure consistency in production

  • Clean and maintain brew house and general area regularly to ensure sanitary environment, including CIP and sanitization of all vessels (fermenters, mash tun, kettle, heat exchanger, and bright beer tanks)

  • Accurately measure ingredients for the brewing process

  • Maintain an inventory of raw materials and brewery supplies

  • Ability to understand and assist in cellar and packaging when needed

  • Draw and record samples

  • Organize production logs and other reports

  • Communicate with Brewing team, management and other teammates across all levels of a brewery operation to ensure that processes are being conducted in the most efficient and highest quality manner. 

The ideal candidate must have the following: 

  • Must be positive and outgoing

  • Exceptionally organized and clean

  • Ability to work independently in a fast-paced environment which involves many short notice tasks and schedule changes. 

  • Ability to lift up to 65 pounds and move 165 pounds as needed.

  • Ability to be on your feet and stay focused and alert for extended periods of time.

  • Continuous use of hands and arms and continuous bending, reaching and twisting. 

  • Excellent verbal communication skills.

  • Basic math skills.

  • Ability to work effectively within a team. 

  • Be detail oriented and strive for the highest quality brews

  • Flexibility in schedule with the ability to work rotating shifts

  • Two years of experience in a production brewery or brewpub

Brand Ambassadors - ILLINOIS

Part-time beer ambassadors to represent Brickstone Brewery at various beer tastings, festivals and other brewery events as needed; throughout the state of Illinois. The responsibilities of this position include, but not limited to:

  • Engaging conversation and educating consumers about Brickstone Brewery and local beers.

  • Pouring beer at tastings, shows and festivals.

  • Serving samples at various beer tastings & tap takeovers, on and off premise.

  • Showcasing Brickstone’s beer selection by setting up and tearing down creative displays at various events.

  • Track performance, inventory, and customer feedback.

  • Being knowledgeable about beer and educating others about Brickstone.

  • Promoting Brickstone Brewery on various social media channels.

  • Taking creative pictures and submitting photos to event manager on social media.

  • Being the face of Brickstone; meeting new people, sharing stories with strangers, and having fun doing so!

Requirements:

  • Must be at least 21 years of age.

  • Ability to lift up to 50 pounds.

  • Ability to be on your feet for 4+ hours at a time.

  • Have flexible availability, most events are nights and weekends.

  • Professionalism and attention to time, costs, and deadlines.

  • Must have a valid driver’s license with a clean driving record.

Preferred candidates will have their Illinois Basset Certification or be willing to obtain one. There are competitive pay rates and monthly incentives are promoted.

BREWPUB JOBS

BUSSER
Bussers create a welcoming atmosphere for our guests by ensuring the restaurant is clean, free of trash & debris, and properly set up. You will work with a team to clear & reset tables quickly and perform light housekeeping duties such as sweeping and mopping floors, stocking glassware and ice, rolling silverware, cleaning high chairs, trash removal and ensuring restrooms are clean and stocked.

Requirements:

  • Must possess great customer service skills and be willing to assist guests.
  • Ability to work positively in a fast-paced environment. 
  • Ability to lift up to 50 pounds as needed.
  • Ability to be on your feet and alert for extended periods of time with continuous use of hands and arms, bending, reaching, and twisting.

DISHWASHER
Dishwashers create a welcoming atmosphere for our guests by ensuring that all plateware, glassware, silverware, and cooking tools and utensils are properly cleaned and sanitized. You will work with a team to ensure these items are stocked throughout the shift. HOST
The host greets all guests with genuine enthusiasm upon arrival, shows guests to their table, and warmly thanks them for coming in and saying goodbye as guests leave. Hosts also answer phones, take reservations, ensure every guest is taken care of, take, package, and pay out carry out orders on their register. Hosts work with a team to ensure every guest is taken care of, reservations and special requests are accommodated, guests are informed of their wait time (if there is one), and hosts also ensure that seating is done efficiently and effectively. Additionally, the hosts perform light housekeeping duties such as cleaning glass and menus, and ensuring restrooms are clean, stocked and orderly.

Requirements:

As a line cook, you will ensure the highest quality food is served at all times from our kitchen. The Line cook is responsible for all aspects of their assigned cooking station – set up and stick products, cooks and presents dishes according to BrickStone recipes, and cleans, sanitizes and maintains equipment, utensils, and tools. Food safety is a top priority.

Requirements:

  • Six months experience as a line cook preferred. li>

Brickstone servers ensure that all guests are provided with prompt and friendly service. The Server describes menu items, assists guests in make food and beverage selections, takes and rings in orders, delivers food and beverages, processes payments, and assists fellow team members to ensure overall guest satisfaction.
